TUNA SALAD

Dig up that packet, can, or tin of tuna hiding somewhere in the cabinet, and quickly cobble together a lite meal, side-dish, or sandwich; use as a topping for crackers, or as a dip for carrot or celery sticks.

Ingredients
1 cn Tuna
1⁄2 c Onion (chopped)
2 c Bell Pepper (Red or green; or both, for the adventurous!)
1 c Celery (diced)
3 T Mayonnaise (generous)
2 T Mustard (more, or less, to taste)
1 T Garlic (grated)
1⁄2 t Oregano
1 pn Paprika (or Smoked paprika )
1 pn Chili powder
1 pn Crushed Red Pepper
1 pn Parsley Flakes
1 T Jalapeno pepper (thinly sliced)
1 t Olive Oil
1 t Serrano pepper (super thinly sliced)
1 t Lemon Juice
1 pn Garlic Powder
1 t Salt and Pepper (Sea Salt optional)

In a large bowl, add the tuna, onion, celery, and bell pepper, along with the chopped peppers and garlic (ie, the aromatics). Mix thoroughly.

Add the rest of the spices gradually (ideally, one or two at a time, but this is just a preference; at any rate, mixing and stirring continuously). 

Finally, add the mustard, mayo, and olive oil stirring thoroughly into the mix (lemon juice,  soy sauce, or even hot sauce is optional!)

Mix again, and... Enjoy!
