I had been to Roscoe's on Pico (just ask my cousin Barack!), I had been to Rocoe's in Hollywood (something like Sunset Gower). But every since they opened up the new joint on Washington and LaBrea, until now; I hadn't been there, yet. Needless to say, I ended up with a healthy portion of collard greens on my plate, next to the fried chicken, and of course, along with a requisite, macaroni and cheese.
So How to Come Home and cook up some Collard Greens?
Ingredients
2 bn Collard Green (fresh (2-3 hours cook))
1 pn Onion Salt
1 pn Garlic Salt
1 t Jalapeno pepper (chopped)
1⁄2 t Serrano pepper (finely chopped)
1 T Onion (finely chopped)
2 T Olive Oil
1⁄2 t Hot sauce
1 pn Salt
1 pn Black Pepper
1 pn Chili powder
1 1⁄2 pn Garlic Powder
1 pn Crushed Red Pepper
1 T Bacon grease
Bring a full pot of water to vigorous boil (high heat). Add onion salt, garlic salt. Add Olive oil. Add chopped aromatics. Stir.
Add collard greens. Maintain vigorous boil for at least 10-15 minutes. Reduce to low heat. Simmer for an additional 20 minutes.
